Oatmeal Cake

Oatmeal Cake

Ingredients:

CAKE:
1 cup rolled oats
1 stick butter (½ cup)
1¼ cups boiling water
1 cup granulated sugar
1 cup brown sugar
2 eggs
1½ cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon salt

TOPPING:
6 tablespoons butter, softened
½ cup granulated sugar
1/8 cup plus 2 tablespoons milk
1 teaspoon vanilla
1 cup coconut
1 cup chopped walnuts
Frozen whipped topping,thawed, or whipped cream
Directions:

Preheat oven to 350°F. For cake, combine oats, butter, and boiling water; let stand for 20 minutes.

Add white sugar, brown sugar, eggs, flour, baking soda, cinnamon, and salt; mix. Pour into a greased 13×9-inch baking pan.

Bake 25 to 30 minutes.

For topping, mix topping ingredients and spread over baked cake.

Put cake under broiler until browned and bubbly. Serve with whipped topping. Makes 12 servings. Recipe courtesy of Teresa Brittain.
