Directions:
Heat oven to 375°F. In a medium bowl combine all first layer ingredients. Mix until mixture becomes a soft dough and all lumps are removed.
Press into bottom of greased 8x8-inch or 9x9-inch pan. Bake 20 to 25 minutes or until top is browned. Set aside.
In a medium saucepan combine all second layer ingredients. Mix well and cook over medium heat until mixture thickens. Immediately pour on top of first layer. Allow to cool. Dust top of second layer with powdered sugar. Makes 9 bars.
*NOTE: Xanthan gum is a food stabilizer and thickening agent used when gluten is not present. Recipe from Cory Mitchell
